Nonstick cooking spray
1 tbsp. cornmeal
1 oz. pack of frozen pizza dough
3 medium plum tomatoes, thinly sliced
4 oz. cooked chicken, cut into 1-inch cubes
3 tbsp. snipped fresh basil
¼ tsp. coarse ground pepper
1 cup shredded reduced-fat mozzarella cheese
1. Coat a 12-inch pizza pan or cooking sheet with some cooking spray. Sprinkle the cornmeal over the surface of the pan or sheet and begin spreading the pizza dough until it has reached the edges or forms a pizza circle.
2. Arrange the tomato slices and chopped chicken over the surface of the dough. Add the basil and pepper, and top it off with the mozzarella.
3. Bake in an oven at 425°F (218°C) for 13-18 minutes until cheese is nice and bubbly.
4. Slice into 12 wedges and serve.
