2 tsp. olive oil (any choice of oil you like)
1 cup fat-free bottled pizza sauce
2 cups (8 oz.) shredded part-skim mozzarella cheese
½ cup (2oz.) grated fresh Parmesan cheese-flavored
1 (12inch) prebaked refrigerated pizza crust (Bololi, Mamma Mary’s)
1. Set the baking rack in your oven to the third shelf, and a second rack on the lowest shelf. Set the oven to 500°F (260°C)
2. Take the prebaked pizza crust out of the plastic bag and brush the olive oil onto the surface of the crust. Open the oven and carefully place the crust on the lowest rack and let bake for 8 minutes. Don’t place the crust onto a baking tray but rather slide the crust into the oven onto the cooking rack using a flat spatula as a guide. After that, remove from the oven carefully in a similar way and place onto a baking tray.
3. Spread the sauce over the surface of the crust evenly, leaving a ¼ inch border if you like. Top with the mozzarella and Parmesan cheese over the entire surface of the crust. Place back into the oven on the third rack for an additional 10 minutes, or until the crust is golden brown. The cheese should be melted but not too brown. Slice into 12 wedges and serve.
