2 ½ cups cauliflower, grated (about ½ a large head)
1 large egg, lightly beaten
1 ¼ cups shredded part-skim mozzarella cheese
2 tablespoons grated Parmesan cheese
Kosher salt and freshly ground black pepper
¼ cup tomato sauce
1 cup grape tomatoes, sliced in half
2 cloves garlic, sliced
¼ teaspoon crushed red pepper flakes
Fresh basil leaves, optional
1. Line a rimmed baking sheet with wax paper/parchment cooking paper and preheat the oven to 425°F (218°C)
2. Grate the cauliflower with a hand-grater until you have 2 cups of cauliflower crumbles. Place into a round bowl and microwave for 7-8 minutes until the cauliflower becomes soft. Remove from the microwave and let cool until later.
3. In the same bowl of cauliflower, mix in the egg, 1 cup mozzarella, Parmesan cheese, and salt and pepper. After adding all these ingredients, hand mash together into a paste and spread onto a prepared pizza pan or baking sheet. This should be enough to make a 10-inch circle of pizza dough. Spray lightly with some nonstick spray and cook in the oven for 10-15 minutes (until golden brown)
4. Then top your pizza with tomato sauce, ¼ cup of mozzarella, grape tomatoes, garlic, and red pepper flakes. Then return the pizza back to the oven and bake until cheese is melted and bubbly, or at least 10 minutes. Remove from oven and top with fresh basil before serving. Slice into 12 wedges and serve.
